Mace is the dried outer cover of the nutmeg seed of an evergreen tree native to the Spice Islands of Indonesia. Mace’s demand, like nutmeg, is increased by the cultivation of the seed. Mace and nutmeg cannot be harvested until 8-9 years after planting, and a tree will reach its full production about 20 years after planting. Mace’s more delicate flavor is preferred for lighter dishes.
